Recipe: Caribbean Grilled Vegetables


Caribbean cuisine is a fusion of many different cultures and flavors, reflecting the diverse history of the Virgin Islands, West Indies, Grenadines, and Bahamas. Bold and spicy flavors, fresh ingredients, and vibrant colors characterize this cuisine, and our spice-infused take on grilled vegetables is no exception. Ingredients:

100 g sweet potato

100 g corn on the cob

100 g okra

50 g carrot

50 g green zucchini

1 t. fine grain sea salt

½ t. freshly ground black pepper

½ t. Creole spice

½ t. lime juice  

1 T. olive oil


Instructions:

  1. Steam sweet potato, corn on the cob, and okra.
  2. Pat vegetables dry with a paper towel. Season with the dry mix on both sides. Place in a large saute pan over medium-high heat.
  3. Grill your vegetables to perfection.
